The One and Only, farmed in Mont-Saint-Michel Bay

Coming from a naturally rich region and boasting generous meat, this mussel gets special attention. Regular independent inspections are carried out to ensure that you have a guarantee of its origin and its top quality.

Following the rhythm of the most spectacular tides in Europe, the farming of this mussel is strictly regulated to enable the mussels to develop under optimal conditions. A structural charter defines the procedures for exploiting resources. The same number of bouchot stakes has been used for more than 40 years, and a certain number of them must be kept empty each year. This tight management guarantees the production system and sustainable development.

The Mont Saint-Michel Bay PDO mussel is only offered to you once it has reached a minimum size of 4 cm and a meat ratio of 25%. That’s not all. Its appearance, texture and flavor are all carefully considered before the start of the market season.

The Mont Saint-Michel Bay Bouchot Mussel is certified ACO (Appellation of Controlled Origin), which will become PDO (Product of Designated Origin).
